Damn the Haggis - a fine Scottish Ale

My o my, do I love the way this beer turns out!  Rich, full flavors, with nice balance and superb finish.  Not a session beer, but it is something most people like one or two of.  The Rauch upfront leaves a little smokiness, the honey helps smooth that out, and the mix of hops bring new flavors in the backend of each sip.  Enjoy! 

Damn the Haggis - Scottish Ale

 16 oz 120L
4 oz Rauch
4 oz choc

Steep grains at 160 for 30 min 
Remove grains, then Add

2 oz heather tips
½ lb honey
8 oz Malto
9 lb ultralight
1 lb dark brown sugar
1 oz northdown         @ 60 min

 1 oz northdown         @30 min 

4 oz brown sugar1 tab whirlfloc @20 min 
¾ oz Saaz, ¾ oz Tett          @ 15 min 

Cool to 68 degrees F, then pitch with Edinburgh Yeast 

Ferment 7-10 days; rack to secondary, then bottle or keg
