Wacky Cake from JoAnn Roggow
My wife’s mom, whom I never had the honor of meeting, was a marvelous baker. She made this one cake, that to this day, brings a wistful smile to my wife’s face when we make it. It’s called Wacky Cake, because the ingredients don’t “seem right.” But trust us, it is a miracle and wonderful creation.
Wacky Cake 3 cups flour2 cups sugar½ cup cocoa2 tsp soda1 tsp salt2 TB vinegar2 tsp vanilla2/3 cup salad oil2 cups cold water
Sift first five ingredients
add last 4, beat until smooth
pour into 9×13 pan
bake at 350 F for 30-35 minutes…
top with sifted confectioner’s sugar - ENJOY!
