Wacky Cake from JoAnn Roggow
My wife’s mom, whom I never had the honor of meeting, was a marvelous baker. She made this one cake, that to this day, brings a wistful smile to my wife’s face when we make it. It’s called Wacky Cake, because the ingredients don’t “seem right.” But trust us, it is a miracle and wonderful creation.

Said to be a favorite of Thomas Jefferson, all I can say is these are sure a family favorite, especially around the holidays - for Thanksgiving and Christmas
Thomas Jefferson Muffins (makes 12)
Preheat oven to 400F
Combine in a mixing bowl:
4 TB Unsalted Butter
½ Cup Sugar beat well
1 Egg
2/3 cup Sweet Potato (cooked) add to above, beat well again, [...]
